Abstract
The Food and Drug Administration (FDA) is amending its regulations to affirm that the use of an aminopeptidase enzyme preparation derived from Lactococcus lactis (formerly known as Streptococcus lactis) in the manufacturing of cheddar cheese and in the preparation of protein hydrolysates is generally recognized as safe (GRAS). This action is in response to a petition filed by Imperial Biotechnology, Ltd.
